Rossa di Verona is a lovely heirloom radicchio with deep red, heart-shaped leaves that are tightly wrapped around one another to form a solid, round head. For a fall harvest, sow Rossa di Verona chicory seeds in May/June and transplant in July. In the early fall, remove all of the leaves above the crown. The characteristic thin, compact, cabbage-like head is generated by the new growth that occurs in cold weather.
