Delicata Squash, Winter (Cucurbita maxima)
Small to medium in size, delicata squash has a long, narrow, cylindrical shape with grooved skin and lines that run the length of the squash. The skin is thin and smooth, with a creamy yellow base and vertical green or orange stripes. The flesh is firm, thick, fine-grained, and yellow to orange in colour, with a hollow cavity in the centre that contains stringy pulp and many flat, hard, cream-colored seeds.
