Catalogna Emerald endive resembles dandelion with its white stems and dark green leaves, but it has a mild taste and tender leaves. Harvest leaves the first year and overwinter for succulent flower stems in mild climates. Since light frost sweetens the taste and excessive heat induces bitterness in the leaves or bolting, endive is an excellent fall crop.
