When dried, it's called ancho, but when it's fresh, it's called poblano. This is one of Mexico's most widely produced peppers. Red fruits that have fully ripened are considerably hotter and more tasty than green fruits that have been plucked earlier. Days to maturity are calculated from the moment the plants are planted in the garden. Add 8-10 weeks for transplants.
