Morris Heading Collard (Brassica oleracea)
Morris Heading has broad, waxy blue-green leaves with light green veins and is an heirloom favourite with a delicious flavour. It is classified as a "heading" category because it produces a loose head similar to cabbage but with a taller stem. Morris Heading are slow to bolt in hot weather and grow to be 24" to 36" tall. Keep the leaves cool before using (they don't like to be kept for long) and remove any browned, yellowed, or damaged leaves, as well as the coarse stems. Blanching the mature leaves makes them mild and tender wrappers for savoury rice and vegetable fillings.
